Quality Unveiled! Exploring the Excellence of The Palar Onyx

At Tea Stories, transparency and quality are at our core. We're pleased to unveil the scientific parameters that define "The Palar Onyx,". These insights offer a deeper understanding of this exceptional tea, influencing its robust flavor, captivating aroma, and full-bodied character.

    Total Ash

    5.71%

Total ash is the inorganic residue remaining after tea leaves are burned, indicating the mineral content. This measures the total mineral content present in the tea.

    Why it matters ?

    • Minerals contribute to the complex flavor profile of black tea, influencing its briskness, strength, and malty notes.
    • The FSSAI prescribes a limit of 4.0 to 8.0% for total ash in tea.
    • The Palar Onyx falls well within this range, meeting the quality standards for black tea.

    Water Soluble Ash

    61%

Water soluble ash refers to the portion of the total ash that dissolves in water. This indicates the presence of minerals like Sodium, Potassium, Calcium and others.

    Why it matters ?

    • These soluble minerals contribute to the briskness and lively character of black tea.
    • A higher percentage of water-soluble ash generally indicates a higher quality black tea.
    • The Palar Onyx exceeds the FSSAI limit of 45%, signifying its superior quality.

    Water Soluble Extract

    36%

Water soluble extract is the percentage of soluble substances extracted from tea leaves when infused with hot water. This measures the substances like caffeine, catechins, theaflavins and others that contribute to its flavor, strength, and health benefits.

    Why it matters ?

    • A higher water-soluble extract generally indicates a richer and more flavorful cup of white tea.
    • The FSSAI recommends a minimum of 32% for black tea.
    • The Palar Onyx exceeds this standard, promising a flavorful and full-bodied brew.

    Crude Fiber

    11.30%

Crude fiber in tea represents the indigestible part of the tea leaf, mainly composed of cellulose, hemicellulose, and lignin. It plays a crucial role in determining the tea's quality and mouthfeel.

    Why it matters ?

    • Lower crude fiber content generally suggests younger and tender tea leaves were used.
    • The FSSAI sets a limit for crude fiber in white tea at not more than 16.5%.
    • The Palar Onyx, with 11.30% crude fiber, comfortably meets this standard.

    Grade

    Orthodox Tea Twirl (TGFOP)

TGFOP stands for "Tippy Golden Flowery Orange Pekoe," a grade that indicates a high proportion of young buds (tips) and leaves. "Twirl" describes the unique twisted shape of the leaves.

    Why it matters ?

    • The presence of tips results in a smoother, more flavorful cup with golden hues.
    • Orthodox processing preserves the natural characteristics of the tea leaves, resulting in a nuanced flavor profile.
    • The "twirl" shape adds a distinctive visual appeal and allows for better infusion of the leaves.

The Purity of The Palar Onyx

At Tea Stories, your well-being is at the heart of everything we do. We go above and beyond to ensure our teas are not only delicious but also safe for you to enjoy. These safety parameters highlight our rigorous testing and commitment to exceeding industry standards.

    Iron Filling

    5mg/kg

Iron filings are tiny metal fragments that can contaminate tea during processing. This measures the amount of these metal fragments in the tea, which can affect its quality.

    Why it matters ?

    • Iron filings are extraneous to the tea leaf and can negatively impact the taste.
    • The FSSAI prescribes a limit of 250 mg/Kg for iron filings in tea.
    • The Palar Onyx has an extremely low level, indicating high quality and purity.

    Glyphosate

    No (Not Detected)

Glyphosate is a widely used herbicide (weed killer) in agriculture. Residues of glyphosate can sometimes be found on crops if not used responsibly.

    Why it matters ?

    • Glyphosate is not typically used in tea cultivation, and its presence can indicate unintended contamination.
    • The FSSAI sets strict limits for glyphosate residue in tea (not more than 1 mg/Kg).
    • The Palar Onyx having no detectable glyphosate reflects our commitment to pure, high-quality tea.

    Heavy Metals

    Well Below FSSAI Limits

Heavy metal are naturally occurring elements that can be present in trace amounts in soil and water. They can contaminate tea through soil, water, or air pollution during cultivation or processing.

    Why it matters ?

    • Heavy metals can accumulate in tea plants, so monitoring their levels is crucial for safety.
    • The FSSAI sets strict limits for each heavy metal in tea to ensure consumer health.
    • The Palar Onyx has been tested and found to have levels far below these limits, ensuring it is safe and pure.

    Pesticides & Fertilizers

    Safety Guaranteed

Pesticides are substances used to protect crops from pests like insects and fungi, while fertilizers provide essential nutrients for plant growth and increased yield while using them responsibly.

    Why it matters ?

    • Pesticide residues can pose health risks, and excessive fertilizers can affect tea quality.
    • The FSSAI sets strict limits for various pesticides and fertilizers in tea to ensure safety.
    • The Palar Onyx has undergone rigorous testing to guarantee it meets these safety standards.

    Hygiene

    Exceeds Industry Standards

Maintaining high levels of hygiene is crucial throughout the entire tea production process, from field to cup.

    Why it matters ?

    • Strict hygiene protocols are followed at every stage, from harvest to packaging, to prevent contamination.
    • Employees are trained in food safety and hygiene best practices.
    • The Palar Onyx exceeds industry standards to ensure a safe and high-quality tea.

The Palar Onyx - A Symphony of Spiritual Farming and Exquisite Flavor

Welcome to Palar Estate, a sanctuary of tranquillity and a source of exceptional teas, cultivated with reverence for the land and a touch of spirituality.

The estate is cradled by the majestic Western Ghats, sharing the same cool mountain air and abundant rainfall that makes the nearby region of Munnar renowned for its tea cultivation. This unique terroir, with its fertile soil and mist-kissed slopes, creates the perfect cradle for cultivating premium orthodox black teas.

From Spice Gardens to Spiritual Farming
From Spice Gardens to Spiritual Farming

Palar Estate's journey began not with tea, but with the fragrant spices of pepper and cardamom. In the early 1970s, the founders ventured into the hills of Palaar, seeking to cultivate these treasures. But as time unfolded, they discovered the potential of the land for tea cultivation. Conventional tea farming was not sustainable.

In 2007, they embraced Spiritual Farming, prioritizing the interconnectedness of all living things and natural methods that rejuvenate the soil. At the heart of this practice lies Jiwamrita, a concoction that enhances the soil.

Where Harmony Brews in Every Cup
Where Harmony Brews in Every Cup

From cultivating tea plants sustainably using natural farming methods to handpicking the right leaves at the right time, crafting exceptional tea begins not in the factory, but in the soil, in the tea gardens, with the leaves themselves. This artistry finds its culmination at Palaar, with the delicate, diligent, and precise process of orthodox tea making in their mini tea factory. The result is a tea that embodies nature's wisdom.

The Palar Onyx, a premium orthodox black tea, is a testament to this harmonious approach. Its leaves unfurl in your cup, releasing a captivating aroma and complex flavors. Notes of rich malt and dark chocolate intertwine with hints of spice and subtle sweetness.

Rich in antioxidants, The Palar Onyx offers an unforgettable, healthful experience. Its robust flavor and lingering finish make it ideal for moments of quiet contemplation. Indulge in The Palar Onyx and embark on a sensory journey to the serene hills of Munnar

The Palar Onyx Process: Where Tradition Shapes Flavor

Our Palar Onyx, a distinguished Orthodox Black Tea from the Palar Estate, is a testament to traditional craftsmanship. Journey with us as we reveal the meticulous steps that transform select leaves into a cup of bold character and rich flavor.

    Icon 1

    Precise Plucking

The journey begins with the careful hand-selection of only the finest tea shoots - the top bud and two tender leaves, ensuring the highest quality for our Palar Onyx.

    Icon 2

    The Art of Withering

Freshly plucked leaves are gently spread on withering trays, reducing their moisture content. This crucial step prepares them for rolling and develops the tea's foundational flavors.

    Icon 3

    Masterful Rolling

The withered leaves undergo a precise rolling process, a blend of tradition and technique, to maintain their beautiful form while releasing their aromatic essential oils.

    Icon 4

    Full Oxidation

In a carefully controlled environment, the rolled leaves fully oxidize. This defining stage develops the tea's signature dark color, robust flavor, and rich, malty aroma.

    Icon 3

    Drying to Perfection

The oxidation process is halted by carefully drying the leaves with hot air, locking in the Palar Onyx's distinctive character, ensuring a consistently flavorful cup.

  • Frequently Asked Questions

TGFOP stands for Tippy Golden Flowery Orange Pekoe — one of the higher tiers in the orthodox tea grading system. 'Tippy' means the batch carries a significant proportion of golden buds; 'Flowery' means abundant young leaves alongside those tips. It is a whole-leaf grade, meaning no broken leaves, dust, or fannings.

In the grading hierarchy, TGFOP sits above FOP and GFOP, and below FTGFOP and SFTGFOP1. For a black tea, TGFOP is a genuinely premium classification — it is what separates The Palar Onyx from estate teas blended and sold at mass-market grades.
CTC (Crush, Tear, Curl) is a machine process that shreds tea leaves into small, uniform granules — optimised for fast, strong extraction and deep colour. It's behind most teabags and everyday Indian chai. Orthodox processing uses whole or long-cut leaves rolled by hand or traditional machinery, preserving the leaf's natural oils, character, and terroir.

The flavour difference is significant: CTC gives you strength and colour fast; orthodox gives you complexity, aroma, and layers that develop through the steep. Orthodox leaves can also be re-steeped — CTC granules are spent after one brew.
At the standard dosage of 2g per 150ml, the 80g pack of The Palar Onyx yields approximately 40 cups. Because the whole-leaf TGFOP leaves can be re-steeped 2–3 times, the effective yield rises to 80–120 infusions per pack — bringing the cost per serving well below ₹20.

For a Rainforest Alliance certified, single-estate orthodox black tea from Palar Estate, Idukki, that is exceptional value compared to premium tea available in Indian retail or cafés.
Milk is not recommended for The Palar Onyx. Milk proteins bind to the polyphenols and theaflavins in orthodox black tea, dulling the malt, dark chocolate, and dried fruit notes that define this tea's character. The cup becomes flat rather than complex — you lose exactly what makes a TGFOP whole-leaf orthodox worth drinking.

For masala chai, the Surianalle Sequel (Tea Stories' premium CTC) is the better choice — CTC grades are specifically processed for strength and milk compatibility. Palar Onyx is best drunk as brewed, where the full character of Palar Estate, Idukki comes through cleanly.
Assam black teas — grown at low altitudes in the Brahmaputra valley — tend toward bold, malty, and brisk characters. They're the workhorses of everyday chai; strong and straightforward. Darjeeling black teas grown at 4,000–6,000 ft produce lighter, more floral, muscatel-noted cups — often called the 'champagne of teas.'

The Palar Onyx sits in its own register: a high-altitude Idukki orthodox at 3,600 ft, with the body of an Assam-style black but the refinement of altitude — malt and dark chocolate with a clean, smooth finish rather than the astringency that lower-altitude Assam teas can carry.
Yes — one of the real advantages of whole-leaf TGFOP orthodox tea is that the leaves hold back flavour compounds not fully extracted in the first brew.

The first steep (3–4 min at 100°C) gives you the boldest, most robust cup. The second steep is slightly softer and more nuanced — the malt and chocolate notes deepen while the spice recedes. Add 30–45 seconds to each successive steep. Most people get 2–3 satisfying steeps from a single measure of Palar Onyx leaves.
Yes — cold brewing works well for orthodox black tea, including The Palar Onyx. Add 2g of leaves to 300ml of cold, filtered water and steep in the refrigerator for 8–10 hours.

Cold brewing draws out the malty sweetness and chocolate notes while softening the spice character — producing a smooth, full-flavoured cold infusion with no bitterness. It's a different experience from hot-brewed Palar Onyx, worth trying on its own as a chilled drink.
The pouch has a built-in tin tie — fold the open end over 2–3 times and press the tie flat to reseal. No separate container needed.

Store away from direct sunlight, heat, and strong-smelling spices. Black tea absorbs surrounding odours — keep it away from coffee and your spice rack. A properly resealed pack retains its full character for 4–6 months. Black tea has a longer optimal window than green or white tea once opened, but freshness still matters — brew through it steadily.
The Palar Onyx contains approximately 40–60mg of caffeine per cup — comparable to most orthodox black teas, and roughly half the caffeine in a standard cup of coffee (80–120mg).

For pregnancy, the general clinical guideline is to stay under 200mg of caffeine per day. One cup of Palar Onyx fits within that threshold; two cups approaches it. Individual advice from a doctor is always recommended. If you are looking for a lower-caffeine option, The Lockhart Lux (white tea, 15–30mg) or The Pattumalay Emerald (green tea, 25–40mg) are gentler alternatives from Tea Stories.
Black tea's polyphenols — particularly theaflavins and thearubigins formed during full oxidation — have been studied for their role in supporting metabolism and reducing fat absorption. The Palar Onyx is fully oxidised orthodox black tea, meaning these compounds are present in high concentration.

The effect is real but modest: it works best as a consistent daily habit alongside a balanced diet. Brewed without milk or sugar, it is also a zero-calorie drink. Two to three cups a day is a practical, low-effort addition to any weight-management routine.
It is one of the best first steps available. The Palar Onyx is bold enough that the shift from strong everyday chai does not feel like a sacrifice — you still get a full-bodied, malty cup with real depth. But the TGFOP whole-leaf orthodox quality and the Palar Estate terroir give it a complexity that teabag chai simply cannot deliver.

If you want something more familiar as a starting point, the Surianalle Sequel (premium CTC from Tea Stories) is the closest bridge. But if you're ready to step up to orthodox, The Palar Onyx is the right tea to start with.
